Khoresht e Ghormeh Sabzi

Iran’s beloved herb stew: diced lamb fillet simmered slowly with fresh herbs, onions, dried lime and red kidney beans until the greens turn deep and the lamb gives way to the spoon.

It cannot be hurried and is not — the pot is started long before the first guest arrives. Served with saffron rice.
